Getting Excited About Mashed Potatoes...

Corn and Smoked Mozzarella Mashed Potatoes

To be honest, mashed potatoes don't generally do much for me. I know lots of people just love them, but something about the blandness and the texture usually put me off. This version, however, is one that I get excited about. I love the smoky flavor that the cheese lends to this recipe, and the kernels of corn pop in your mouth and solve my usual "texture issues" with mashed potatoes. And...they're pretty! I love the flecks of yellow from the corn, and the bits of pink from the potato skins. Flavorful, unique, and pretty...these are the perfect mashed potatoes for me!

Don't you just love corn and smoked mozz together? My brother would love this . . . he always used to smoosh together his mashed potatoes and corn on Thanksgiving. ;-)

Lia - you know, I thought the idea was kind of strange when I first read the recipe - I'd never had corn in mashed potatoes before! I'm so glad I tried it, though, because it was REALLY good!
