Finally! Perfect Shrimp!

Basil Shrimp with Feta and Orzo

There's a fine line between "cooked" and "rubbery" when it comes to shrimp, and I often seem to cross over that line when I'm preparing it. Shrimp really takes so little time to cook, but for some reason I always feel unsure when I check it to see if it's done. Not so with this recipe , which directs you to bake the shrimp - along with the other ingredients - in a foil packet. I baked it for the time stated in the recipe, took it out of the oven, and...perfect! Not only was the shrimp the perfect amount of "doneness", the flavors of this recipe were AMAZING. Basil, feta, and tomatoes - what could go wrong with that? Since it's winter time, I used canned tomatoes, but I can't wait to make this with fresh tomatoes from DR's garden this summer. Not to mention the foil packet made for a fantastically easy clean-up! Now that I've finally pulled off shrimp the way it's supposed to be, I'll be making variations of this recipe again and again.

this recipe turned out perfectly for me! i made the salad with spinach, blackberries and raspberries. it looked so pretty on the plate. i,too, have had trouble with overcooking shrimp - this was easy and the shrimp turned out just right!
