Cool as a Cucumber

Tzatziki (Greek Yogurt and Cucumber Dip)

This is what I'll be eating for lunch most of the summer: pita bread, carrot sticks, and this creamy, cool tzatziki - it's the perfect thing in the middle of a hot day when nothing else sounds appealing. Cucumbers and yogurt are two of my favorite foods in the summertime: there's just something about them that instantly makes me feel cooler (which is a good thing, because - I don't know if I've mentioned this on the blog before - I absolutely despise being hot). There are a million different variations on tzatziki, but this recipe is my favorite: in addition to tzatziki standards like cucumber, Greek yogurt, and dill, cumin and coriander add enough spice and flavor to make this recipe unique. This makes a great simple lunch with some pita bread and raw vegetables, but there are many other possibilities for it, too: it's great on burgers, vegetable sandwiches, or as a dip with meatballs, chips, or carrot and celery sticks at a party. With so many different ways to use this, tzatziki makes an appearance in our house at least once a week all summer long.

Yup, it's pretty much the same thing as a cucumber raita!
