An Alternative to Ice Cream for Dinner

Taco Pasta Salad

There are some humid summer days where I just can't stand the thought of eating a hot meal. You know, those days where nothing much sounds good, except for maybe fresh fruit and ice cream? Well, since I can't just eat ice cream and fruit all summer long, I've been experimenting with pasta salads and taco salads the last couple weeks. This recipe is the best of both worlds...a taco salad and a pasta salad, all in one bowl! Pasta, ground turkey, black beans, fresh tomatoes, bell peppers, and cilantro all combine with a creamy taco-inspired lime sour cream dressing to make a salad that's light enough for summertime, but filling enough to make you feel like you've really eaten a meal. This recipe makes a lot of pasta salad, so it's great for a potluck or picnic - or to pack for lunch at work or school for a week. Add a couple slices of watermelon and you've got the ideal summer meal...and maybe you can even save some room for ice cream when you're done.
