Our Favorite Way to Grill Chicken

Spicy Honey-Brushed Chicken

Trying to sneak in a couple more grilling posts in this last month of summer...it sure has flown by, hasn't it? This has been both mine and DR's favorite grilled chicken recipe this year. I'm not always chicken's biggest fan: because it's such a lean meat, it's very easy to dry out - not to mention that there sure seem to be a lot of flavor-less chicken recipes floating around out there. Fortunately, this chicken recipe has neither of the two pitfalls that I often associate with chicken. The first layer of flavor comes from a dry rub of chili powder, cumin, and cayenne pepper (among a few other things) - this is where the "spicy" part of the recipe comes in. The second layer of flavor imparts a hint of sweetness: the chicken is basted with a mixture of honey and cider vinegar. The result is a spicy/sweet flavor combination that's amazingly good. This recipe calls for chicken thighs - although you could probably use breasts if you wanted to, thighs don't dry out as easily as breasts do, so we really like them...especially when we're grilling. There's still a few warm weeks left in Minnesota perfect for cooking outdoors - try this one while you still can!
