Sweet and Salty Rice

Coconut Rice

This Thai-inspired rice pairs well with many things: curries, peanut sauces, stir fries, shrimp, chicken, tofu, vegetables, beef, pork...it's one of the most versatile (and delicious) side dishes I can think of. As an added bonus, DR and I also think it's excellent all on its own, and have been known to eat it without accompaniment on occasion. Sticky, a little bit salty, and a little bit sweet - if you're a fan of coconut, you'll love this rice. It can hold its own against any coconut rice I've had in a Thai restaurant, and it's not much more complicated than making a regular pot of rice. Hmmm...maybe I should. Although I think you might be the only one at the center who is adventurous enough to try it!
