Have a muffin (or two) for breakfast!

Honey Peanut Butter Banana Muffins

Muffins are a wonderful solution for those of us who need to grab a quick breakfast on our way out the door in the morning. As I've mentioned before, I like to make a big batch on the weekends and keep them around for weekday breakfasts and quick snacks. I love these particular muffins because they're quite filling and flavorful, and they use absolutely no sugar at all (not that I'm opposed to sugar, but it's nice to be able to leave it out once in a while). Instead, they use honey as a sweetener - and the combination of the honey with the banana and peanut butter makes for one delicious muffin! Baked goods for breakfast don't always go over so well with DR, but when I gave him one yesterday morning, he liked it so much he asked for another!

Oh my do these look good! With three of my favorite ingredients! We've got a local honey producer that makes this gorgeous, unfiltered, unbelievably complex and wonderful honey that I'll bet would be stunning in this recipe. This'll be a winner with Noe too :-). Thanks!
